Breakfast!

I love breakfast foods, but the typical high carbohydrate, high sugar weekend breakfast will leave me feeling bloated and exhausted in a few hours. Check out what I cooked for my family this morning – so much more nutritious and filling than the standard weekend breakfast options. We are lucky here in Portland, Oregon to have a local market, New Seasons, that has fantastic bulk turkey sausage that does not contain sugars.

Breakfast this morning: almond flour pancakes, blueberry compote, turkey sage sausage, and paleo mochas – delish!

Almond flour pancakes – makes 8 small pancakes
1 cup almond meal/flour
2 eggs, whisked
1/4 cup seltzer
2 Tbsp oil
1/4 tsp sea salt
8 drops liquid stevia
mix all ingredients together in a bowl and cook on griddle on medium heat using butter or coconut oil. Flip once they are browned on the bottom. Serve warm with blueberry compote.

Blueberry compote – serves 4
Put a cup of frozen blueberries in a microwave-safe dish. Microwave on high for 1 minute, stir, and microwave for 1 more minute.

Paleo mocha – serves 2
1 cup coffee or 1 Americano
1 cup water
8-16 drops liquid stevia
1-2 Tbsp cocoa powder, unsweetened
coconut milk, to taste
Mix all ingredients in a saucepan, heat and whisk until blended and warm. Adjust cocoa powder and coconut milk to taste, add more stevia to make it sweeter.

    Wow. This sounds like a great breakfast. I want some! I actually find that I crave healthier foods like vegetables and stuff in the morning. It’s the after 9pm snacking that kills me. Any advice there….other than just don’t do it?
